Preparation of Koko Samoa
    1. Harvesting & Processing Beans: Ripe cocoa pods are harvested, and the seeds (beans) are separated from the pulp. 
    2. Drying & Roasting: The beans are fermented, sun-dried, and then roasted over a hot fire. 
  • Grinding: The husks are removed, and the beans are ground into a liquid paste using a wooden mortar and pestle. 
  • Forming the Paste: The paste is sometimes molded into hardened blocks, often using plastic-lined cups, to create a solid form of pure cacao. 
  • Brewing: To make the drink, pieces of the Koko Samoa block are broken off, added to boiling water, and stirred until melted. 
  • Sweetening: The mixture is then sweetened with sugar or coconut cream before serving.
